We see cauliflower as a substitute everywhere lately and it’s for a good reason. If you love it or have been hesitant to try it, this recipe is your big chance.

This cauliflower “rice” and black bean salad is truly nutritious and packs a big flavour punch. Made with our Chipotle Spiced Oregano dressing, this salad is a fantastic side dish or packed lunch.

Servings:
6-8

Ingredients:

  • 1 large Cauliflower
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn kernals
  • 1 ea Red pepper, diced
  • 1 ea Avocado, diced
  • 1 pint Cherry tomatoes, halved
  • 2 3 ea Green onions, sliced
  • 12 cup Chipotle-spiced Oregano Dressing
  • 1 ea Lime, juice and zest
  • 1 tsp Sea salt

Directions:

  1. Grate the cauliflower, or place florets in the food processor in 2 batches and process in a fine rice like consistency.
  2. Toss all the salad ingredients together in a large bowl with the dressing.
  3. Allow the salad to sit for 10 minutes before serving.
