Chicken and Shrimp Kebab
Ingredients:
- 1⁄4 cup Olive oil
- 2 tbsp Lemon juice
- 2 Garlic Cloves/ Minced
- 2 tsp Dried oregano, or herb of your choice
- 1⁄2 tsp Salt
- 5 Chicken Breasts
- Pack of fresh shrimp
Directions:
- Cube chicken breasts and clean shrimp
- Toss Ingredients together and let marinade, can be done night before or 20 minutes prior
- Pre heat oven to 425°F Note. Can be done on grill.
- If using wooden skewers, soak them in a bowl of water for about 15 minutes. Place Chicken and shrimp on skewers.
- Let cook for 20 minutes
Tzatziki
Ingredients:
- cups Plain yogurt
- whole Cucumber
- tbsp Oregano
- tbsp Lemon + Zest
- tbsp Mint
- Salt and Pepper
Directions:
- Grate Cucumber, squeeze and zest lemon, mince garlic, rip or chop herbs.
- Add all ingredients, adding salt and pepper to taste.
- Mix well and set to the side.
Olive and Feta Smashed Potatoes
Ingredients:
- 12 Potatoes
- 6 whole Garlic Cloves
- 1 cup Feta
- 1⁄4 cup Olive oil
- 1⁄2 cup Kalamata Olives, pitted and chopped
- Sea Salt and Fresh Pepper, to taste
Directions:
- Wash and cut the potatoes into approximately 2” pieces. Place the potatoes and garlic cloves into a large pot and cover with water. Season the water with salt and bring the potatoes to a boil. Reduce heat, and simmer for 15-20 minutes or until tender.
- Drain the potatoes and return to pot. Mash with a potato masher, or large fork. Stir in the olives, feta, and olive oil. Season to taste with sea salt and pepper.
- Plate Chicken and Shrimp Kebab with Olive and Feta Smashed Potatoes. Drizzle Tzatziki on top, adding fresh garden herbs for garnish.
