We love using protein alternatives and quinoa is so diverse. This lemon and asparagus quinoa salad has such a fresh flavour and beautiful colour, and features Hope Blooms lemon smoked caesar dressing.

Make a double batch because it tastes even better the next day!

Ingredients:

Directions:

  1. Heat 1 Tbsp of the oil in a sauté pan, add the onions and sauté until tender.
  2. Add the asparagus to the pan and cook until tender crisp, and remove from heat.
  3. Combine all of the ingredients in a mixing bowl and season to taste with sea salt and pepper.
  4. Serve chilled or at room temperature.
