This roasted squash and pear soup tastes like a perfect Nova Scotia fall day. It takes local fall ingredients roasts them to create a beautiful flavour that truly is a soup for the soul.

This recipe is best enjoyed with good friends and your favourite sweater!

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Toss the squash, pears, onions and garlic cloves with the maple sage balsamic dressing, salt and pepper.
  3. Spread evenly on the baking sheet and roast for 25-30 minutes, or until caramelized.
  4. Add to stock and bring to a boil, reduce heat and simmer for 20 minutes.
  5. Place soup in the blender and puree until smooth.
  6. Place soup back in the pot, and adjust seasoning as needed.
  7. Can also be finished with heavy cream for a richer flavor.
